What is Whetstone sharpening?

Whetstones consist of a couple of abrasive materials that are bonded together that offer a consistent surface all the way through the stone. With a quick soak or splash of water, the stone is ready to begin removing metal from a knife with a clean and smooth result.

What does ‘Brunoise’ mean?

Brunoise is a classic knife cut that results in a very small cube at the measurement of 2mm on each side. It is a word of French origin and can be pronounced (broon-waz).


Is sharpening cheap knives worth it?

Any knife can be sharpened to a usable edge and every knife that is usable should be sharp.

The tip of my knife broke off, can you fix this?

Most of the time. You are encouraged to have us look at your knife to assess any damage that is done. If the damage is extremely severe, we may reshape the knife or take an extensive amount of steel off of the knife.

The blade of my knife is bent , can you straighten it?

To some extent.

Can you sharpen serrated edges?

We do not sharpen serrated edges.

How often do knives need to be sharpened?

Sharpening will depend on usage. If you are in the kitchen for 12 hours using your knife, you will need maintenance more often than someone who uses a knife at home once or twice a week. We recommend to sharpen about once per month to maintain a healthy edge.

Are all knives sharpened the same way?

No. Every knife is looked at closely for any damage and then assessed to be sharpened. Knives become as unique as those who wield them. Some knives have a steeper angle than others and some are built for a specific task. They are sharpened with all of this in mind.

Besides knives, what else can Brunoise sharpen?

We have sharpened sheers, straight razors, axe blades, and ice auger blades!

What type of manicure instruments do you service?

So far we have sharpened straight razors and sheers for hair stylists.

How should I care for my scissors?

Caring for scissors is just like caring for your knife. Don’t choose a job that is to big for the scissors you are using and maintain them regularly.
