How We Sharpen?

Whetstone Sharpening - using synthetic and natural Japanese stones gives you the edge you want and the attention to detail you and your knife deserves.

Edge Retention
As you sharpen, you are removing metal, all that metal moves to the edge of the knife, that “burr" creates a false edge and needs to be removed.  Many people mistake the bur for the edge, because it grips and feels sharp, but it is weak loose metal that will collapse on your first contact with the cutting surface. 

Extended life of the knife

By using a whetstone versus a grinding/sanding belt like many other local “sharpeners” use, you are able to put in more attention to detail, and sharpen more precisely, extending the life of your knife.

With whetstone sharpening you must pay attention to every move you make, with this attention and focus, every flaw, knick, or chip is repaired.

Single Bevel Sharpening

$20/per knife (Japanese knives)

Japanese knives are often made of much harder and brittle steel. Sharpening them to a finer more consistent edge is very important for these task specific knives taking more time.


Double Bevel Sharpening

$12/per knife (most knives are double bevel)

Many of the knives in our kitchens are double bevel knives. They are often a slightly softer steel and are a little easier to manipulate. They are also holding an even grind on both sides making them much more accessible.

Knife Repairs

Each Repair is a case by case basis, usually ranging from $18 - $30

A knife with a broken tip, chipped blade, or extremely poor edge will in no way perform as it should. This can be very unsafe and inefficient.

Benefits of a knife repair are:

  • A properly sharpened knife is precise and exact. Keeping up with maintenance is key to making sure your knife performs the way it was made to

  • Your guests, friends, and co-workers are certainly going to notice that sharp polished edge!
